At Trocadero arena we are very aware of the importance of a healthy balanced diet without synthetic aditives. This is why we like to serve our dishes with fresh produce harvested specialy for us.
Produce is harvested from our own organic garden located in the Guadalhorce valley (Malaga) and is certified by the Junta de Andalucia. For this reason our dishes only use vegetables that are in season respecting the natural harvest cycles.

Our tuna fish is solely fished with a traditional fishing method called Almadraba, allowing us to offer you the juiciest and tastiest pieces.
The pieces are kept at a temperature below -60º C in our facilities, ensuring they are preserved until they are cooked so that you can enjoy them on the plate. Furthermore, we are equipped with a tuna fish cutting area, which enables us to carefully select each piece on the basis of its culinary use.
Our dry and brothy rice dishes are made with top-quality ingredients: rockfish and shellfish, saffron from the La Mancha appellation of origin, our own Alicante-style toasted noodles and our home-made aioli.

The meat you can taste at our restaurant is selected from the very best herds of the north of Spain and Europe. It is cooked on holm oak charcoal grills to maintain its taste and juiciness on the plate.
Our ibéricos are a selection of pure acorn fed Jabugo pigs so they have the máximum flavour when served.
The process combines unique natural conditions of oak forrests so that all the ibérico products we offer are excellent entrees or snack.
